Ingredients
2 avocados, ripe
4 free range eggs
2 bacon slices (optional)
Pickled red onion (optional)
Pinch of ground pepper
1 tablespoon chopped chives or fresh herbs of your choice
Instructions
- 1. Preheat oven to 220℃.
- Slice avocados in half, and remove the pit. Using a spoon, scoop out the
center of each avocado half so that a cracked egg will fit inside. - In a small baking dish, arrange the avocado halves so that they are facing
sliced side up. - Crack an egg into a small cup and gently pour into each avocado half.
- Bake for 15-20 minutes or until the egg white has set. Remove from the
oven and season with pepper, bacon, pickled red onion and herbs. - Serve.
