1 cup pitted Medjool dates
1 cup almonds
¼ cup unsweetened shredded coconut
3 tablespoons coconut oil, melted at room temp
1 tablespoon Reishi powder (optional, can add adaptogen of choice or omit)
1 tablespoon Ashwagandha powder (optional, can add adaptogen of choice or omit)
¼ teaspoon Himalayan salt
Choices for Rolling:
Raw cacao powder
- Add the Medjool dates, almonds, shredded coconut, adaptogens (if using) and salt to a food processor and pulse until it forms into a sticky dough.
- Using your hands, roll into bite-sized balls, and then roll into a plate of shredded coconut (or choice of another topping) to top if desired.
- Store in the fridge in an airtight container.
